Happy 4th of July

This weekend the nation celebrated the 4th of July. Traditionally, my family and my husband’s family have gotten together, found a great place to view the fireworks, brought food to share and enjoyed the evening. This year we found our 4th looked a little different. Being pregnant in the age of COVID with numbers rising all around us, we are participating in social distancing. So this year we had 2 separate gatherings, both 6 feet apart from family. It was a quiet year, with the distance, and with fireworks displays being canceled, but it didn’t stop us from celebrating with one another.

One tradition that I love is s’mores on the 4th of July! This year I new my s’mores would need to travel easily and stay together as we traveled from house to house. During an hour long wait at the OB’s office, I came across the perfect recipe! Keep reading for my journey with mini s’mores!

Here’s what you need: 2.5 cups of milk chocolate chips, 1/2 cup of whipping cream, marshmallow fluff, graham crackers and dipping chocolate.

Begin by heating the whipping cream on the stove top to a boil. While the whipping cream was heating I began breaking the graham crackers into fourths and laying them out on foil (the recipe called for wax paper, but I didn’t have any, so I used foil and it worked great). Add 2.5 cups of milk chocolate chips to a heat resistant mixing bowl.

Once the whipping cream reaches a boil, slowly pour it into the mixing bowl with the chocolate chips. Whisk until blended.

Spread this chocolate mixture over one side of half of the graham crackers.

Spread marshmallow fluff over one side of the other half of the graham crackers.

Press the chocolate covered graham crackers together with the marshmallow covered graham crackers, creating a sandwich.

Heat the dipping chocolate. Dip about half of each of the s’mores sandwiches into the dipping chocolate. Lay on the foil to cool.

I made these a day ahead. So after they were dry, I stored them in the refrigerator until the next day, just to be certain that the chocolate would be nice and hardened.

They were delicious and they were a hit!
